Eating plenty of veggies doesn’t have to mean a plate full of boring greens. In honor of Fresh Veggies day today, swap your regular spinach salad for a new-to-you combination or roast your favorite root veggies with garlic, olive oil, and your favorite spices. You can always blend a handful of veggies (and fruits) for a nutrient- packed smoothie, too.
